i tried telling it only to use 1024x768 at 75hz (hence the _75.00... saw it on a forum meh)

Hmm CC_macine - if you don´t know if this syntax really is correct (I myself can´t recall right now if it is)-
Use your window manager´s config dialog (it will also just edit your xorg.conf, just via frontend).. like "control panel" -> "display" or something.. this is usually a foolproof way for people that switch from windows... (like me heh) ;)
I remember entering horizontal/vertical refresh ranges instead of distinct refresh rates (those that are listed in the system specifications of your monitor´s manual)
This might be outdated though, it´s been a while I changed an xorg.conf...

Okay, first of all, I think these ...
------

... should be in Section "device" under Driver "nvidia"
Now, once you move those four lines, add this line ...
------
Option "UseEdidFreqs" "false"
------
... directly under those four lines that you moved. If you only use 1024x768@75Hz, then restart your X server. If you use other resolutions as well, then you should find the proper HorizSync and VertRefresh values for your monitor and provide them under Section "Monitor" ... Check your monitor's manual or google for its specific brand and model.
