hi!
i'm using the bin_unix versions.
What are the options to lauch a server?
i lauch ./linux_server -mlbah to lauch a LAN server, but how to choose the map, change map, etc..

Is that really worth a new thread?
EVERY command-line options are documented in config.html
To choose/change map, use the command /map on a client, as you would do on SP. The vote will pass if the majority votes for the same map.
AFAIK, you can't enforce map selection on server.

how can i avoid internet players to connect to my server?

According to common sense ;)
1) To launch a LAN server, have your server PC on your LAN instead of the internet (ie any PC on your LAN)
2) To avoid other players: this is what -mblah is for.

If ppl from internet are connecting, maybe you launched once the server on your internet gateway, or a PC with a public IP and/or port-forwarded behind your fw/gw, so ppl have a record for it in their servers.cfg make sure ppl from internet can't connect to ports 28765 and 28766 of your cube server

^^^ If you don't understand this, it's that you don't need to know this. In this case, just understand that as "launch cube server on a PC of your LAN that's not your internet gateway"
