A friend and myself are going to be setting up a dedicated server for coop edit where people can make what they wish.
We would like some advice on the best way to configure the server, and any scripts to use.
We'd also like to make the server make incremental saves automatically (every x minutes) incase of griefers trashing the map.
If possible we'd also like to make it so when people join the server the current version of the map will be sent to them.

I myself am trying to set up a dedicated server; one suggestion I can provide is to not have incremental saves automatically, because if the server admin is away or off of the server for any length of time, there is a possibility of greifers coming in and trashing your map, and then it would save over it.
I'm not sure if this would be practical, but you could just /savemap "server_bak1_example" or some map name like that whenever you make any significant progress on your map.
As for having the server send the clients the map, you might be able to have a script running that could detect when a player joins, and then it sends the map file to the client. I don't have any of these things I am suggesting, but if nothing else, it gives you some things to look for...
Good luck, and let me know when you get the server up and running

Incremental saves will take care of anyone trashing the map. Just to explain what it is, is saving a map with a version number which increases after each save. map_00001, map_00002, etc.
I wasn't aware that its possible to keep track of joins and leaves in the scripting. I'd need to look in to this more to be able to make a sufficient script.
