I was curious if someone could put together a list of console commands used in Sauerbraten. There doesn't seem to be a thread or document that lists different commands so I hope people could put one together.

You're lucky I have just such a list lying around (give or take a few entries).
Commands:

They aren't commands or vars the way you'd think of them, only how they're defined in the source. (If anyone could enlighten me as to what the difference is, that'd be good. I'm no good at programming. :P)
Oh, and you're on your own for what they do. :)
For those interested, the commands I used were
grep -hoER 'COMMAND[A-Z]*\([[:alnum:]]+,' *
grep -hoER 'VAR[A-Z]*\([[:alnum:]]+,' *
No idea how complete the resulting list is.

An interesting list. Some of them are probably self-explanatory. I mean things like "crosshairsize" for example while others are no doubt more obscure and likely require consulting with the wiki, source code and/or study of basic game programming.
